VinEataly is a refined enoteca where tradition meets modernity, created by Marco Pietrobon and Fabio Colantoni. Marco brings extensive international hospitality experience, having opened his first acclaimed restaurant in Sydney in 2005 and later managing venues such as Jamie’s Italian in Perth, the Perth Convention Center, Cable Beach Resort, and Vanitas at Palazzo Versace. After further refining his craft at Isola Bar & Cibo on Rottnest Island, he returned to Perth to open VinEataly in Dalkeith with Fabio.
Fabio is an accomplished chef with years of experience in Michelin-starred and award-winning kitchens. After opening a pasta shop and a café in Perth, he joined Marco to combine their shared passion for authentic Italian cuisine. Fabio’s modern take on traditional flavors, paired with Marco’s warm hospitality and expertly sourced Italian wines, creates a dining experience that brings the true essence of Italy to Western Australia.
